Homemade Gravy from Scratch | Chef Anthony's Unconventional Gravy Recipe
You can’t skip the gravy when it comes to making turkey for the holidays. This isn’t your traditional gravy recipe, but it is still one of the best gravy’s you can make for just about anything really. Don’t be afraid to top this on chicken or turkey, mashed potatoes, or even fries.
If you’re using induction, this gravy can be done in a matter of just 10 minutes. You can of course do this on a gas or electric cooktop, but induction manages a low heat without burning or overcooking anything.
Preheat your pot on high and start by adding in a stick of butter. Let this melt down completely. If you’re on induction, this may only take about 30- 45 seconds. Once completely melted, add ¼ cup of flour and mix this until it’s evenly incorporated into the butter.
Bring your heat back down to low and stir until you get a paste. You want to stir this until it is smooth. This should take about 1 – 2 minutes Both the flour and butter will work together to thicken up the final product of the gravy.
Throughout the entire process, we’ll be seasoning this 3 times with salt and pepper. The first time being when the butter and flour have incorporated together nicely. Take about a pinch of each, or 2 pinches of a salt and pepper mixture. Now raise the temperature back up to high, and add in the aromatics: chopped onion, and celery. You can also add in carrots.
Sauté the onion and celery until soft and almost translucent. We’ll add depth to our flavors by adding ¼ cup of white wine and steaming the onion and celery.
Once the flavors have diffused into the onion and celery, fold in your mushrooms next. At this point you’ll season with salt and pepper a second time. Turkey or chicken stock is essential for gravy.
Make a mixture of either 1 cup chicken or turkey stock with a 1 cup of heavy cream. Keep in mind when adding this, you don’t want your gravy to be too runny. Add it in little by little as you go and monitor the thickness of the gravy as it cooks.
Bring this down to a simmer until everything is soft and tender and cook until this gravy thickens. Finish it with a tab of butter, the third round of salt and pepper, and chopped fresh sage. This gravy recipe is fantastic for any dish you would top off with some gravy. All done in just minutes on your cooktop.
Ingredients:
- 1 stick butter
- ¼ cup all-purpose flour
- 1 tsp salt
- 1 tsp pepper
- ½ cup diced onion
- ½ cup finely diced celery
- ½ cup diced mushrooms
- ¼ cup white cooking wine
- 1 cup heavy cream
- 1 cup choice of stock (chicken/turkey/vegetable)
Method:
Melt better on high heat for 1-2 minutes
Bring temp down to low and mix in flour until smooth
Season with pinch of salt & pepper
Raise temp back to high, and sauté onion and celery until translucent
Pour white wine into mixture, and lower heat to simmer until evenly incorporated
Add mushrooms, and season with another pinch of salt & pepper
Slowly add heavy cream and stock mixture until gravy is thick, but not runny
Simmer on low heat until gravy thickens
